Boscolo Budapest's Salon Restaurant opened its doors in the spring of 2010. In it the elegance and quaintness of the pre-world war era is coupled with modern interior design resulting in a unique sense of harmony. Chef de Cuisine Andras Wolf is one of the inventors of "Essential Hungarian Gastronomy", putting emphasis on the reinvention of traditional Hungarian dishes. The restaurant takes place in the building of The Most Beautiful Café In The World, which one is a “must-see” when visiting Budapest!

Elegance is in the taste. In our salon restaurant we reinvent traditional Hungarian cuisine while preserve the most important characteristic of our dishes: their taste. You will experience our creative touch when it comes to texture, shape and color – the result: a piece of art. Essential Hungarian Gastronomy has brought traditional Hungarian dishes into international limelight once again.

This recently renovated, Italian eclectic style renaissance building looks enchanting even from outside, but this isn’t the only reason Salon restaurant makes an excellent dining venue for special occasions: here, „essential Hungarian gastronomy” gets prime billing. Here, you’ll step into another world as soon as you set foot inside. The place’s trademark tranquility and quietly classy setting guarantee an unforgettable experience for all at all times. The spacious interiors add an air of intimacy to deep conversations; they also elegantly augment the exquitise meals, prepared from only the very best locally sourced ingredients.

Our chef has revealed that his top priority is to dazzle customers, not to prepare meals day in day out for visitors. The menu features four- and seven-course meals, which include vegetarian options too. Each course has its own sommelier wine recommendation, as the harmony of food and wine define the dining experience. You will glean a unique insight into the gourmet world, and experience the excitement of mouthwatering combinations such as marinated pike with quail’s eggs and pea juice, or butternut squash soup with dill parfait.

“Welcome. My name is Andras Wolf, I am Chef de Cuisine at New York Cafe and the Salon Restaurant. In the footsteps of my father I fell in love with gastronomy as a child. Since I was a youngster I have been committed to the reinvention of Hungarian cuisine and the redefinition of long forgotten traditional Hungarian dishes. I am a firm believer of using local authentic quality ingredients only. I considered the 2009 invitation to head the kitchen at New York Cafe and the Salon Restaurant a serious challenge. Delivering excellence for a five star hotel, the prettiest cafe in the world and one of the most elegant restaurants in the city is not a regular job. My priority is to conserve and reshape traditional Hungarian dishes. As a result of my experimenting during the years a new concept was born: Essential Hungarian Gastronomy. According to this method preserving the most important characteristic of the dishes – their taste – but altering their texture, shape, preparation and serving modern, even more enjoyable creations are born. “

The event of Tradition and Innovation on 1st of December 2016 was visiting Petit Dej with our excellent quality truffles. With the help of a whole-day truffle market, the daily offer, and a truffle dinner crowning the day, we made Vienna taste these treasures of the forests. The wine selection of Babiczky Wine was available as usual.

At the next event of the Tradition & Innovation series on November 2 we would like to demonstrate that the high-quality Hungarian truffle is not an unreachable luxury. We intend to offer a culinary experience for our Guests by serving dishes which can be easily made at home too. With the dinner it will be possible to choose from Babiczki Wine's wine collection as usual


Tradition and Innovation is planned to be comprised of 10-12 events during the course of which one may learn more about the diversity of Hungarian truffle-gastronomy and get a glimpse into how truffle is used by professionals (bakers, cooks, confectioners) in their respective fields.
The event organizer Tube Trade Ltd. is a truffle manufacture seeking to supply customers with truffle provided by ethical gatherers through a transparent commercial system. We seek to provide services in accordance with the needs of restaurant trade as well as providing high-qua- lity svice to individual customers. We are unique in the market in being able to supply ready-made truffle products to anyone lacking the necessary equipment (such as vegetable preparation unit and washer). We are relying on the contribution of our partners (chefs) in determining the directions of product enhancement.

Truffles

The first truffle dinner of a series of events called Tradition and Innovation is focusing on two currently gatherable types of black truffles (Tuber uncinatum, Tuber macrosporum), the sweet Hungarian truffle (Mattirolomyces terfezioides) and seasonal forest mushrooms.

The dishes will be prepared by Jeremy Cayron, executive chef of Sofitel Bangkok Sukhumvit and Zsolt Serényi.

Those attending the event will have the opportunity to learn about different kinds of truffles and forest mushrooms, exchange experience as well as ask the hosts of the event about the secrets of their profession. Enquiries about mushrooming will be answered by a mushroom expert and experienced truffle hunters.
