Our history

The name GUNDEL could rightly stand for the history of modern Hungarian gastronomy and hospitality. Károly Gundel refined the Hungarian cuisine and created delicious dishes of his own taste. His pioneering work placed Hungary on the world map of gastronomy. The New York Times wrote that the Gundel Restaurant did more for Hungary’s reputation than a shipload of tourist brochures.

Károly Gundel also documented gastronomic history. He collected local recipes all over the Carpathian Basin as Hungary’s world famous composers Kodály and Bartok recorded Hungarian folk music. He is the author of cook books translated into dozens of languages.

The Restaurant earned his shine since Károly Gundel opened this house in 1910. Its reputation was strong enough to survive the stormy decades of war and communist nationalisation. Having been privatised in 1992 the GUNDEL took back its deserved position in Hungary as the country’s leading restaurant.

Genuine Hungarian food or a selection of international dishes are offered to the guests with immaculate service in an unparalleled atmosphere. The Gundel Band plays to satisfy the highest expectations in a hall decorated with the finest paintings of the best Hungarian masters. A careful selection of wines from all Hungarian resorts as well as from all over the world will make the meal for you a memorable event

The team

These days 120 skilled people work at the banquet events and in the restaurant of the Gundel. They are committed to serve you to your utmost contentment in line with the principles of the late Károly Gundel. Their dedication resulted in a number of revisiting guests and the reputation of the Gundel House is continuously increasing for more than a century, all over the world. Executive Chef Gábor Merczi tunes the menu finely with the best care that is completed by his skilful sous-chefs and kitchen staff. The Hungarian Award-winning Sommelier Mihály Fabók pairs the best wines from Hungary and from other countries with each fabulous meal.

The event of Tradition and Innovation on 1st of December 2016 was visiting Petit Dej with our excellent quality truffles. With the help of a whole-day truffle market, the daily offer, and a truffle dinner crowning the day, we made Vienna taste these treasures of the forests. The wine selection of Babiczky Wine was available as usual.

At the next event of the Tradition & Innovation series on November 2 we would like to demonstrate that the high-quality Hungarian truffle is not an unreachable luxury. We intend to offer a culinary experience for our Guests by serving dishes which can be easily made at home too. With the dinner it will be possible to choose from Babiczki Wine's wine collection as usual


Tradition and Innovation is planned to be comprised of 10-12 events during the course of which one may learn more about the diversity of Hungarian truffle-gastronomy and get a glimpse into how truffle is used by professionals (bakers, cooks, confectioners) in their respective fields.
The event organizer Tube Trade Ltd. is a truffle manufacture seeking to supply customers with truffle provided by ethical gatherers through a transparent commercial system. We seek to provide services in accordance with the needs of restaurant trade as well as providing high-qua- lity svice to individual customers. We are unique in the market in being able to supply ready-made truffle products to anyone lacking the necessary equipment (such as vegetable preparation unit and washer). We are relying on the contribution of our partners (chefs) in determining the directions of product enhancement.

Truffles

The first truffle dinner of a series of events called Tradition and Innovation is focusing on two currently gatherable types of black truffles (Tuber uncinatum, Tuber macrosporum), the sweet Hungarian truffle (Mattirolomyces terfezioides) and seasonal forest mushrooms.

The dishes will be prepared by Jeremy Cayron, executive chef of Sofitel Bangkok Sukhumvit and Zsolt Serényi.

Those attending the event will have the opportunity to learn about different kinds of truffles and forest mushrooms, exchange experience as well as ask the hosts of the event about the secrets of their profession. Enquiries about mushrooming will be answered by a mushroom expert and experienced truffle hunters.
