We had an interesting phonecall from CNN International in December describing their show - Destination: Budapest.

We had an interesting phonecall from CNN International in December describing their show - Destination: Budapest.We were informed that they would like to show special winter activities in Budapest, so a crew would join us for a truffle hunting tour. They would be happy if a Michelin starred chef joined us too. So we invited the starred Eszter Palágyi and the star-awaiting János Mizsei for a hunting tour. We would like to say thank you for CNN for making such a good image film on Budapest, it was our pleasure to guide you in the forests!

250,000 EUR for truffle plantations in Spain

Diputación Provincial de Huesca opted for a fund of 250,000 EUR to support new truffle plantations.

The amount is split to those applicants that meet the requirements of the tender open until 7th February 2019. the tender covers 80% of the total expenses.

‘Exceptional’ white truffle in Italy fetches €85,000 from Hong Kong buyer

A rare 850 gram white truffle was auctioned for €85,000 ($96,000) in the Italian region of Alba on Sunday, with the anonymous Hong Kong buyer paying nearly 30 times this year’s market price for smaller nuggets.

The annual auction held in the region near Turin saw the unusually large white truffle sold at a price that would value it at €100 per gram.

“The price of this exceptional truffle does not correspond to the market price, which this year is around €350 for 100 gram,” the event’s spokeswoman told AFP.

Hungary has four Michelin starred restaurants, Costes, Costes Downtown, Borkonyha and the two starred ONYX. The decision was born in December, but Michelin keeps the secret until the official introduction of the Guide. The ceremony was held in Budapest aiming to introduce Hungarian gastronomy.

Truffle hunting with an excellent company

Nowadays in the peculiar times in Hungarian gastronomy we prefer a new direction!

We have invited János Mizsei, the chef of MÁK Bistro, Stéphan Remon, the chef of Paris Budapest Restaurant (Sofitel Chainbridge), and Ádám Garai, the chef of Olimpia Restaurant and their crew to a fantastic truffle hunting tour.

Our guides introduced themselves and their dogs, and certainly the habitat of the truffles, giving information on the rules and potentials of truffle hunting to our guests, who enjoyed the excursion and loved the excitement of finding the treasures under the ground.  We had a truffle picnic in the forest, tasting the truffled butter, truffled dip with toast and sticks of celery and carrot.

At the next event of the Tradition & Innovation series on November 2 we would like to demonstrate that the high-quality Hungarian truffle is not an unreachable luxury. We intend to offer a culinary experience for our Guests by serving dishes which can be easily made at home too. With the dinner it will be possible to choose from Babiczki Wine's wine collection as usual


Tradition and Innovation is planned to be comprised of 10-12 events during the course of which one may learn more about the diversity of Hungarian truffle-gastronomy and get a glimpse into how truffle is used by professionals (bakers, cooks, confectioners) in their respective fields.
The event organizer Tube Trade Ltd. is a truffle manufacture seeking to supply customers with truffle provided by ethical gatherers through a transparent commercial system. We seek to provide services in accordance with the needs of restaurant trade as well as providing high-qua- lity svice to individual customers. We are unique in the market in being able to supply ready-made truffle products to anyone lacking the necessary equipment (such as vegetable preparation unit and washer). We are relying on the contribution of our partners (chefs) in determining the directions of product enhancement.

Truffles

The first truffle dinner of a series of events called Tradition and Innovation is focusing on two currently gatherable types of black truffles (Tuber uncinatum, Tuber macrosporum), the sweet Hungarian truffle (Mattirolomyces terfezioides) and seasonal forest mushrooms.

The dishes will be prepared by Jeremy Cayron, executive chef of Sofitel Bangkok Sukhumvit and Zsolt Serényi.

Those attending the event will have the opportunity to learn about different kinds of truffles and forest mushrooms, exchange experience as well as ask the hosts of the event about the secrets of their profession.
