We have invited János Mizsei, the chef of MÁK Bistro, Stéphan Remon, the chef of Paris Budapest Restaurant (Sofitel Chainbridge), and Ádám Garai, the chef of Olimpia Restaurant and their crew to a fantastic truffle hunting tour.
Our guides introduced themselves and their dogs, and certainly the habitat of the truffles, giving information on the rules and potentials of truffle hunting to our guests, who enjoyed the excursion and loved the excitement of finding the treasures under the ground. We had a truffle picnic in the forest, tasting the truffled butter, truffled dip with toast and sticks of celery and carrot.
As the truffle season have started late this year, this special tour was hosted by our partner, Bernadett Miklós, at her own hunting area, which is one of the earliest truffle producing forestst in Hungary.
Our guests could experience that the dogs bring the most aromatic, most mature truffles first. Unfortunately it means at the beginning of the season that the most fragrant truffles brought to surface are damaged by slugs and insects. After removing the damaged parts of the truffles they do not lose their gastronomic value. One of the beauties of truffle hunting is the recognition of the time to leave to another spot, when the dogs start to bring less mature truffles, even it means to leave a part of the perfect shaped, undamaged truffles under the ground.
